Since my entire family switched to a ketogenic diet (no carb, no sugar diet), our freezer is always fully stocked with beef, pork, fish, seafood, and of course, chicken. Chicken is a staple in our weekly menu, and lately I’ve actually been experimenting with different ingredients to create my own recipes (proud moment here–I never thought this day would happen).
I have to say though, life has become so much simpler now that we’ve eliminated a lot of unhealthy ingredients from our diet. We now stick to fresh ingredients, and stay away from anything processed and canned. So we always have plenty of vegetables to go with our meats, and we’ve even started growing our own veggies and herbs (let me know if you need dill and lemongrass, our plants are huge and we need to harvest them regularly).
When it comes to our meat, I try to be mindful to buy free range, and make doubly sure it is free from antibiotics, hormones and steroids. I cannot begin to tell you how dangerous our food has become (ill do another blog post on this), and the last thing I want is to feed my family with anything that has been injected with chemicals and hormones.

So okay, back to my easy peasy recipe. Here it is:
You will need:
1 whole Magnolia Chicken
Lemongrass
1 whole white onion (chopped)
1 whole Lemon (squeezed)
1 tablespoon Tabasco sauce (or according to taste)
1 teaspoon Turmeric
1/2 teaspoon Fish sauce (sugar-free)
Salt and Pepper to taste
1/2 cup Butter
Vegetables of choice (chopped carrots, baby potatoes, bell pepper)
What to do:
Marinate chicken with salt and pepper, fish sauce, Tabasco, lemon juice, turmeric and butter, making sure you spread the ingredients inside and outside the chicken. Then stuff the chicken with lemongrass and white onions. To make the chicken meat tasty, add butter underneath the skin of the chicken and massage it all together.
Put the marinated chicken on a baking dish and add vegetables. I didn’t put the veggies this time (I usually do), and bake for 30 minutes in a preheated 400 degree C oven.
Ta-daaaaah! Here’s the chicken after roasting it for 30-45 minutes (better to check it once in awhile to see how it looks). An easy, tasty meal for the whole family. Serve with veggies to make it keto-friendly!
